There are a number of Contry Markets around Cork where people are always selling home baked products. Not sure how you would get in contact with them though.

You could always put some ads around locally and maybe have a picture of what one of your cakes looks like. And aim for the lucrative Birthday Cake market, with emphasis on being fresh every day. Places like shops typically get their stuff direct from the bakery.
