Anyone have any nice recipes for soup? My personal one is for vegetable soup. If everyone could post any recipes for soup here, twould be great, because I'm addicted, but need variety! THis is mine:

5 large potatoes
2 large onions
3/ 4 carrots
Salf
Pepper
Water
Stock Cube
Thyme

Wash and peel the veg, chop them a bit, and sauté them in a large saucepan for about 5 mins. Add 2 pints/ 2.5 pints of boiling water, a stock cube, and a good bit of salt, pepper and thyme. Stir together until water reboils, leave simmering for about 15 mins, and liquidise! Tasty soup.

Ever try Pumpkin soup. To die for.

1 Butternut Squash (in Oz it's a Butternut Pumpkin) deseeded, skin removed, and cut into chunks,
1 Onion,
1 or 2 cloves of garlic,
1 Small red chilli, dried, preferably a Birds Eye chilli, (optional),
1 1/2 pints of good chicken stock,
couple of bay leaves,
salt and pepper to taste,
half spoon of sugar.

Fry the onion, garlic and chilli in a little oil, until soft, do not brown. Add all other ingredients, just a little salt and pepper. Bring to boil and simmer for about 10 - 15 mins, test squash, if soft it's cooked. Remove the bay leaves, and puree. Add a little water if too thick, should have the consistency of cream. Taste and add salt and pepper if needed. Enjoy. Scrumptious with baguette...

I always use a dried Birds Eye chilli, it's about a quarter inch long, and hot as hell, but in the soup it's heat is diluted, but you can still taste it. The chilli gives it a kick, a kinda lift. The squash can be difficult to prepare. You need a strong sharp knife. Cut the narrow end off, and quarter the bottom half. Now removed the seeds, and cut the skin off. It is a dense vegetable/fruit, and will need some force to cut through.

ahhh, the nicest soup in the world llyod grossmans carrot and corriandor soup. it is yum!

get bus to sainsbury's... get out and turn left, go to soup aisle select the 3 bean soup, sainbury's posh own brand one, get back on bus, open tin, microwave, insert spoon, enjoy

courgette and cream cheese kicks ass.

5 courgettes
a potato
an onion
clove of garlic
450g pack of philadelphia
salt and pepper
veggie stock cube

wash and chop everything except the cheese and put in a saucepan with 3/4pint of stock. boil for 20mins. liquify. add cheese. liquify again and eat. tis yummy stuff but it is luminous green and you have to liquify it really well to get it smooth, one of them hand held ones is best for the job.

i've also got a yummy one for carrot and corriander but i can't remember it off the top of my head and broccoli and orange soup is good too but again i can't remember it and i'm too lazy to go look for them.

heinz tomato soup.

open, pour in a saucepan and heat. possibly the nicest non homemade soup around plus very little salt and a good dollop of whey protein so it fills you right up....

Ooooh, so thats what cilantro is! God, here was me thinking it was something very posh for such a long long time. Disappointing.

Tomato soup:
2 tins tomatoes, pureed, and sieved (if liked),
third to a half a bulb of garlic each clove peeled and thinly sliced, or crushed,
couple of bay leaves,
the required dried red chilli (preferably Birds Eye chilli), chopped
salt and pepper,
sugar,
good olive oil.

Heat the oil, but not hot, add the garlic chilli and bay leaves, fry until the garlic is soft, DO NOT BROWN. Add the tomato, some salt and pepper to taste. Add some sugar. I always add about one heaped soup spoon per can of tommytatoes. Simmer for about 15 - 20 mins. Then taste and adjust seasoning, adding more sugar if wanted. Add water if wanted to thin the soup.

Sieving the tommytatoes gives a nice smooth soup. Frying the bay leaves enhances their flavour. And the Birds Eye chilli is a variety of chilli, not frozen chilli packaged by the Birds Eye food company. Leaving the soup overnight in the fridge improves the flavour unbelieveably. I thicken this to a sauce consistency, and use it instead of bought pasta tommytatoe sauces.

tins tomatoes, tomato puree, onion, carrot, parsnip, celery, kidney beans, peppers, lentils, garlic, courgette, stock!! throw all into a pan and cook for till soft, kinda blend and add water till right thickness!!!
